Berkshire Pork
David Newman, a preeminent farmer and scientist is owner of the oldest Berkshire genetic line in America and works with over 20 farmers in the Midwest to raise purebred Berkshire hogs. The Berkshire is Britain's oldest established breed of pig and was first imported to America in 1823.
Lamb
Our lamb comes from ancient breeds, the Tunis and Dorset Horn, and are raised in Vermont at Tamarack Farm exclusively for Heritage Foods. 100% Heritage breed lamb is a marvelous gastronomic pleasure and much milder and more pleasant to the palate than regularly available lamb.
Goat
Naturally raised goat is a seasonal meat — ready for market in the fall. In 2011, we partnered with dairies in upstate New York and Vermont to purchase their unwanted goats. Now the project embraces all goat meat and includes world-class restaurants from coast-to-coast, and in Sydney, Frankfurt, Rome, Amsterdam, London, and beyond.
