Buffalo Turkey or Chicken Wings with Blue Cheese Dressing

For the Wings
Ingredients:
- 2-2.5# turkey wings or chicken wings, split into drumettes and flats with wing tips
- 2 Tbsp baking powder
- Salt and pepper, to taste
- ½ cup hot sauce (Franks, Tabasco, Farmstead by Heatonist, or your favorite)
- ½ cup butter, cold and diced into 1 inch pieces
Preparation:
Preheat the oven to 425º F.
Split chicken wings in half and place in a medium mixing bowl.
Season chicken wings with salt and pepper and toss evenly in baking powder. Lay wings out on a baking sheet with a wire rack.
Roast wings, turning every 20 minutes, until crispy and brown for about 1 hour. When finished, place wings in a medium mixing bowl.
Bring hot sauce to a boil in a medium sauce pot, reduce heat to a simmer and slowly whisk in butter, a couple of pieces at a time, until it forms an emulsified sauce. Pour sauce over wings and toss. Serve with blue cheese dressing and crunchy celery and carrot sticks.
For the Blue Cheese Dressing
Ingredients:
- 1 cup crème fraîche
- ½ cup buttermilk
- ¼ cup Bayley Hazen blue cheese, plus the remainder of 8 oz piece of cheese crumbled for garnish
- 1 head of roasted garlic cloves (split head in half, drizzle with olive oil and salt and pepper, wrap in foil, and roast in a 350F oven for 45-60 minutes until golden brown and soft)
- ½ cup picked Italian parsley
- ½ cup picked dill
- 1 tbsp freshly ground coriander
- 1 tbsp freshly ground cumin
- ¼ of a shallot
- ½ lemon, juiced
- 1 tsp Worcestershire sauce
Preparation:
In a food processor or using a stick blender, add the crème fraîche, buttermilk, blue cheese, roasted garlic cloves, parsley, dill, coriander, cumin, shallot, lemon juice, and Worcestershire sauce. Blend until combined. Taste and season with salt if needed. Remove to a container and set aside.
