For the Wings

Ingredients:

  • 2-2.5# turkey wings or chicken wings, split into drumettes and flats with wing tips
  • 2 Tbsp baking powder
  • Salt and pepper, to taste
  • ½ cup hot sauce (Franks, Tabasco, Farmstead by Heatonist, or your favorite)
  • ½ cup butter, cold and diced into 1 inch pieces

Preparation:

Preheat the oven to 425º F.

Split chicken wings in half and place in a medium mixing bowl.

Season chicken wings with salt and pepper and toss evenly in baking powder. Lay wings out on a baking sheet with a wire rack.

Roast wings, turning every 20 minutes, until crispy and brown for about 1 hour. When finished, place wings in a medium mixing bowl.

Bring hot sauce to a boil in a medium sauce pot, reduce heat to a simmer and slowly whisk in butter, a couple of pieces at a time, until it forms an emulsified sauce. Pour sauce over wings and toss. Serve with blue cheese dressing and crunchy celery and carrot sticks.
