This Fatted Calf Salami is made from Newman Farm Berkshire pork and perfectly paired with Armagnac & aromatic spices.
The Fatted Calf was one of Heritage Foods' first customers and remains one of its biggest. Each week they bring in hundreds of pounds of heritage pork from pork loins and shoulder to ribs and belly for their delicious Fatted Calf bacon! They have two beautiful shops, one in Napa at Oxbow Market and one in San Francisco. Their meat case is a testament to diversity both in the fields and in the curehouse.
