Whether you call it Pork Milanese, Scaloppine, or Schnitzel, there is one thing that always holds true: a thin breaded slice of heritage pork loin is one of the tastiest meals on the planet! We take the San Francisco Pork Strip Loins from the porterhouse section of our loins and cut them into thin steaks. They are then covered in a secret blend of bread crumbs by our dear friend Pepe who is an expert on all the Italian classics.
These pork cutlets are easy to eat and take only a couple of minutes to prepare — in a pan or cast iron skillet, heat about 1/2 inch of vegetable oil over medium heat. Eat alone or covered with tomatoes, arugula, good olive oil, and slices of Parmigiano Reggiano over the top.
Inspired by both the best of Southern Italy and old-school New York style classics, this heritage cutlet is breaded in the style of Little Italy's San Gennaro Fair by Pepe Giocoli and his Parma Sausage Co.
