These cutlets are a delight to eat and take only a few minutes to prepare — in a pan or cast iron skillet, heat about 1/2 inch of vegetable oil over medium heat and fry until golden brown and crispy. Eat alone or top with tomatoes and arugula, good olive oil, and shaved Parmigiano Reggiano.
