Coppa, Capocollo, Gabagool — whatever you like to call it, coppa is a tantalizing piece of charcuterie — a meaty, whole muscle with lacy, delicate, white fat interspersed and a seasoning of pepper and juniper berries. The result is a delicious pronounced flavor that splits the difference between prosciutto and salami. Exclusively made from 100% Lazy Red Wattle Ranch and Newman Berkshire Farm pork and aged by the great Antonio Fiasche of Tempesta Artisans in Chicago, this salami lasts for 1 year unopened in the refrigerator and contains no nitrates or nitrites except those naturally occurring in sea salt and cultured celery powder.

Sliced Finocchiona Salami, one 3oz pack, Tempesta Artisans 
Finocchiona meaning “fennel salame” is identified closely with the region of Tuscany.  Tempesta compliments this finocchiona with black pepper, Sangiovese wine, a sprinkling of whole fennel seed, and a blast of wild fennel pollen. The addition of whole fennel seeds show beautifully and add textural dynamics to each slice, while the wild fennel pollen perfumes the senses with the aroma of sweet anise.
