Our bison are raised by Roaming Acres Farm. We are huge fans of the exquisite meat quality, flavor and juiciness of their Plains bison — the ground meat is rich and delicious.
Bison meat tastes clean, minerally, beefy, herbaceous, grassy and round. An adventurous alternative for beef eaters, bison is incredibly flavorful and toothsome while naturally lean. Bison have never been domesticated which makes them truly wild game.
Bison are a keystone of the prairie ecosystem. The species of grasses, the wildlife, the birds – even the contour of the land reflects the hoof print of the bison. One might say bison are the “keepers of the plains”.
In their hay-day the plains bison and the wood bison grazed from Alaska south into Mexico and out toward the eastern seaboard of the United States. Bison were incomprehensibly plentiful. Every year tens of millions of migrating bison wore the same path, crossing the Ohio River, running northwest to the Wabash and into present day Illinois. That path later became highway U.S. 150.
