Goose is incredibly tasty, boasting sweet and earthy flavors and rich silky textures. Because of the high amount of fat that surrounds heritage breed goose, the meat is as rich tasting as anything you will ever eat.

In the wild, geese mate for life, and each one exhibits a different personality. Related to the duck and swan, the goose is more terrestrial than its relatives and prefer to graze on grass, so their bodies are well-exercised. 

Geese are majestic and gregarious birds with keen eyesight making them great watchdogs. They are credited with once saving the city of Rome from attack. They can be put to work cleaning weeds in fields, a tradition in the American South!

The goose is a delectable option for the poultry lover. Cold plucked geese, processed in the traditional Kosher method, are especially desirable because this method keeps the skin more intact, improving the overall quality.

To keep heritage breeds of geese on farms we must eat more of them so that more are raised!
