Our heritage Silver Appleyard duck is raised to the high standards of the Good Shepherd Network. Duck is incredibly tasty, boasting sweet and earthy flavors and rich silky textures. Because of the high amount of fat that surrounds heritage breed duck, the meat is as rich tasting as anything you will ever eat.
Cold plucked duck, processed in the traditional Kosher method, is especially desirable because this method keeps the skin more intact, improving the overall quality.
Heritage duck is a delectable option for the poultry lover. For Americans, these birds may seem a bit Old World and intimidating to cook, but the truth is they are no more difficult to prepare than a chicken or a turkey and they are incredibly tasty, boasting sweet and earthy flavors and rich silky textures. Like all heritage breeds, the duck needs slow, gentle cooking for a crisp skin and a succulent, moist interior.
To cook, season the meat on all sides and sear in a heavy bottomed saucepan on medium heat, fat side down to render. Once browned, flip the meat and sear it in the rich, rendered duck fat. Once browned on both sides, place the pan into a 325 degree oven and roast for about 20 minutes per pound or until the meat is fork tender.
