Bloomsday has a firmer texture with a fabulous nutty flavor and addictive lingering aftertaste. If you like cheddar and Manchego, you’ll find your mix in Bloomsday. Aged 4-6 months with a medium bite and lots of depth. Made with raw cows’ milk, salt, traditional calf rennet, and cultures. Cato Corner Farm makes all their farmstead cheese by hand with raw milk from their 45 Jersey cows on their small Connecticut farm.
