Bison came here with early humans who arrived via the land bridge of the Bering Strait. Bison were a steady and reliable food source for Native Americans and then for American settlers. Hunted to the brink of extinction, the herds have rebounded and bison meat is again a readily available food source.
Our Plains Bison is tender and juicy with a sweet rich flavor. It is a clean tasting meat with character. Bison has less fat and calories than beef. We source bison from Roaming Acres Farm who has been dominating the farmer’s market scene for decades.
Bison is a keystone of the prairie ecosystem. The species of grasses, the wildlife, the birds – even the contour of the land reflects the hoof print of the bison. One might say bison are the “keepers of the plains”.
In their hay-day the plains bison and the wood bison grazed from Alaska south into Mexico and out toward the eastern seaboard of the United States. Bison were incomprehensibly plentiful. Every year tens of millions of migrating bison wore the same path, crossing the Ohio River, running northwest to the Wabash and into present day Illinois. These roads were then used by humans and eventually paved over to become Highway 150.
