Whole Roast Turkey with Garlic Herb Butter

If you are looking for a simple technique to enhance the flavors of your heritage turkey, look no further! This herb-fill recipe is relatively easy to complete and infuses an herby richness to the finished turkey.

Ingredients:

  • One Whole Heritage Turkey
  • 1 C (2 sticks) unsalted butter - room temperature
  • 3 cloves of garlic
  • 1 tbsp sage
  • 2 tbsp rosemary
  • 2 tbsp thyme
  • 1 lemon - zested
  • Salt 
  • Pepper

Preparation for the Herb Butter:

Place your room temperature butter in a mixing bowl with the zest of one lemon. Mince the garlic and add to the bowl. Remove the thyme and rosemary from their stems and finely chop all of the herbs. Add the chopped herbs to the bowl. Season with salt and pepper. Mix with a spatula until well combined.

Preparation for Seasoning The Bird:

Loosen the skin of the turkey. Starting from the neck, gently slide your hands in between the skin working your way down. Repeat this step, this time starting from the bottom of the turkey breasts, working your hands out towards the thighs. Spread the butter as evenly as possible under the skin. Any remaining butter can be spread on the outside of the turkey. Season the outside of the turkey with salt and pepper.

*If the butter becomes too soft, place back in the fridge for 20 minutes. Conversely, if the butter is too firm to mix let sit at room temperature longer before mixing.
