An aged, raw-milk cheese made in small batches, Swallow Tail Tomme has a semi-firm texture and a flavor that is complex, creamy, and earthy. The raw milk allows for the flavor of place, in this case the pastures of northwestern Vermont, to come through in every bite. This cheese is cave-aged for at least 60 days until it emerges with a delicious, fresh taste, ready for your cheese board.
Stony Pond farm is a family-owned, certified organic farm specializing in supreme quality fluid milk, farmstead cheese, and naturally raised 100% grass-fed and grass-finished beef. They started with dairy in 2007, producing milk for Organic Valley, and in 2019 expanded to making cheese! Tyler & Melanie Webb steward the farm with the mission "to share food that is healthy for the environment, the mind, body and the soul. It is all one, and the happy, fulfilled, prosperous farmer that shares life with blissful contented cows, passes on food to the consumer unmatched in quality."
