This is a mild, Pyrenees-style tomme with a natural rind. It has a sweet tang upfront followed by subtle herbaceous notes. It is delicate, nutty, earthy, and floral, and won first place at the American Cheese Society and World Cheese Championship annual competitions this year.

Blakesville began their cheesemaking in 2020 on the same farm where they raise and milk their goats today. The cheeses are naturally ripened, focusing on developing characteristic flavor and texture and eschewing shortcuts or techniques that would affect quality. Owner Lynde Uihlein was working on restoration and land preservation in the area when she was approached with an offer to buy an existing dairy farm and begin her work to expand sustainable farming in the shrinking agricultural region of Southeast Wisconsin. The farm was transitioned from cows to goats where head cheesemaker Veronica Pedraza now transforms the milk of their herd into a delightful array of soft-ripened and aged goat’s milk cheeses.
