All you need to do to achieve perfect results for our newest featured product is defrost to room temperature and slip the spare ribs under the broiler until a crispy crust forms — about 20 minutes. These ribs are massaged with Omnivore Sicilia, a tomato based sauce with ancho peppers, adding a bright mildly spicy and balanced flavor.
These flavorful ribs are vacuum-sealed and cooked using the sous-vide method. This trending French technique that exercises precise temperature control, has been gaining popularity because of the consistency in doneness unmatched by any other method of cooking.
Our sous-vide ribs are prepared by master craftsman Thomas Odermatt, the genius butcher behind our Heritage porchettas, secretos, and spring garlic roasts. We first met Thomas through Alice Waters in 2005 and have been working with him ever since. His business, Roli Roti, is founded on hundreds of years of butchering tradition honed in his Swiss homeland — we are sure you’ll find his cooked and pre-seasoned ribs delicious!
