To honor Orthodox Easter we introduce one of our favorite foods with origins in Cyprus. Wrapping mutton or pork in caul fat and seasoning it with onions, spices, and herbs is a tradition that goes back millennia. Sheftalia (the Turkish word for fishing net, because caul fat looks like a net) are delicious oval shaped sausage, boasting the flavor of grilled heritage meat coupled with crisped caul fat casing, which when rendered adds so much flavor and snap.
