We are always excited to introduce a new sausage in our collection!
Merguez is a spicy lamb sausage that originated in North Africa with the Bedouin people and became popular throughout Morocco, Algeria, Libya, and Tunisia and eventually across the Mediterranean, the Middle East, and Western Europe.
Traditionally a long and thin sausage of only lamb and/or beef, we have added our heritage pork for flavor and sweetness following in the footsteps of so many great chefs including Jacques Pepin and Lidia Bastianich.
To make this merguez, we ground up lamb from Newman Farm and added harissa, paprika and other spices, mixed in a little pork, and stuffed it into natural sheep casings.
In Africa, this protein-packed treat is usually grilled and paired with couscous or mixed into a tagine and in France, merguez is typically stuffed onto a baguette and topped with mustard or mayonnaise and French fries.

Ingredients: lamb, harissa paste (hot chili peppers, garlic, onion, water, extra virgin olive oil, salt, spices, sunflower oil, lactic acid), and less than 2% of the following: salt, spices, vinegar, fresh garlic, sugar, sodium nitrite. Stuffed in lamb casing.
