Boston Butt, Red Wattle
Originated in New Caledonia, refined in New Orleans, and gone hog wild in the forests of Texas, the Red Wattle sits between man and nature. The shoulders are charmingly inconsistent, racy, and bold, with sweet nutty undertones.

St. Louis Ribs, Old Spot
The Old Spot pig originated centuries ago in Gloucestershire in the South West of England that borders Wales, where heritage breed farmers bred a pig to conform to the standards of their traditional cuisine. The Vale and surrounding areas are renowned for Gloucestershire Pie, or squab pie; Double and Single Gloucester cheeses that are rich and buttery with a flaky texture and mellow, and nutty character; Stinking Bishop cheese; and other hearty and fortifying foods. The Old Spot is a fatty breed high on sweet buttery flavor!

Belly Chops, Berkshire
This is a new cut for us that combines the skin-on belly with the spare rib, perfect for a slow roast or succulent braise.

Bacon, Duroc
Originated in the eastern United States and corn belt by way of the Guinea coast of Africa, Duroc meat is crisp and clean — known for great marbling and polished texture its taste is approachable on the palate.
