The pork of English kings and queens, the Berkshire is known for its consistency. Berkshire shoulders get a workout but the high-quality fat makes them tender, delicious, and succulent.

Country-Rib Chops, Red Wattle
Originated in New Caledonia, refined in New Orleans, and gone hog wild in the forests of Texas, the Red Wattle sits between man and nature — its chops are charmingly inconsistent, racy, and bold, with sweet nutty undertones.

Center-Cut Chops, Old Spot
Originated in England for high quality fat content — Old Spot chops feature a generous fat cap with creamy well integrated marbling throughout the chop.

Belly Chops, Tamworth
The “bacon pig” was bred for pristine bellies – this is a new cut for us that combines the skin-on belly with the spare rib, perfect for a slow roast or succulent braise.
