A delicacy everywhere, pâté is a spreadable terrine perfect on crackers and served with cheese and other charcuterie! Ours is true to tradition, produced by Chris Eley of Smoking Goose in Indianapolis, and made from pasture raised 100% heritage breed pigs raised by Newman Farm (Berkshire), Lazy S. Ranch (Red Wattle) and Good Farm (Old Spot).
Pâté traditionally uses all the cuts from the animal, nose to tail. Every artisan makes a different version as each comes from a different place with different breeds of livestock, and has a different array of leftover cuts. Chris adds figs to this one, lending our pâté an easy to appreciate fruit-forward sweetness with warm spice undertones.
We first met Chris at the Good Food Awards and fell for his broad selection of charcuterie and devotion to the Indiana food community. He belongs to a generation of young American curemasters marrying old world techniques with sustainably produced ingredients.
Our pâté is gluten free and contains dairy and eggs. Ingredients: 100% heritage breed pork, pork liver, pork back fat, pork caul fat, pork heart, heritage pork bacon, dried figs, eggs, sea salt, milk powder, port, vegetable powder, cane sugar, black pepper, garlic, mustard, white pepper, cinnamon, clove, nutmeg, ginger, coriander.
