Pancetta is an Italian version of bacon made by dry curing pork belly with salt, pepper, and spices. A myriad of traditional dishes call for rendering chunks or slices of pancetta as the base for a sauce or a crispy garnish but a version as fine as Chris Eley's of Smoking Goose can be enjoyed in many more ways.
We love draping thin raw slices over grilled vegetables or just-toasted crusty bread. These 8oz pieces are beautifully firm with ribbons of fat and lean throughout, making it so easy to cut and work with at home. This is the perfect piece of cured pork to keep on hand for all occasions! Once opened, it lasts for months, just wrap tightly in plastic and store in the refrigerator.
We first met Chris at the Good Food Awards and fell for his broad selection of charcuterie and devotion to the Indiana food community. He belongs to a generation of young American curemasters marrying old world techniques with sustainably produced ingredients.
Our pancetta has no nitrites or nitrates added except for those naturally occurring in sea salt and celery powder. Ingredients: 100% heritage pork belly, sea salt, brown sugar, spices (garlic, juniper berries, black pepper, bay leaves, nutmeg), red wine, vegetable powder (celery juice and sea salt). Gluten Free. Keep refrigerated.
