Heritage is starting a Staff Meal Program delivered to the homes of industry folk out of workas long as they live in the Tri-State area (we are still coming up with a plan for the Midwest and West Coast). We have always had a Staff Meal Program and now we hope it can be useful again.
Each box will include: 2 piece fore shanks skinless (4lbs), 2 country rib pieces (3lbs), and 1 st louis rib slab (3lbs). The food costs $21 plus $28 for the box and FedEx. Please share this link with anyone who you feel could use it. We wish it could cost zero but hopefully $49 can be of help to some people.
Whole shanks are at their decadent, practically medieval best served whole as a majestic centerpiece, braised with the caramelized meat falling off the bone. Or pull the meat ahead of serving for spectacular tacos and sandwiches. The bone brings flavor and a visceral, deep-rooted pleasure. These shanks are enormous and can feed a hungry crowd.
The country rib is a 4-rib rack that separates the shoulder from the loin and therefore has characteristics of both — it is known as the farmer's cut because it is one of the most cherished parts of the pig. It can be grilled like a loin chop, or slowly braised like a shoulder roast. The New York Times recently featured this cut and said it “has rich, deep pork flavor... and it is ideal for those slow-cooked dishes we crave in cool weather.”
The St. Louis rib is the same as a spare rib, but with the fatty brisket bone trimmed off making this cut a little more delicate and easier to cook more evenly. As with all of our ribs, this popular cut comes from extremely healthy, free-ranging pigs and only need a little bit of olive oil, salt, and pepper to bring out their extraordinary flavor... but we’ll understand if you want to get out the barbecue sauce!
