Aged two months or more in the cellars, Galax is a mellow cheese whose smooth, buttery texture brings out the natural sweetness of the raw cow's milk. Tangy lemon flavor gives way to a touch of walnut nuttiness on the finish. The texture is pleasantly soft and springy, melting on the tongue.
We love using Galax in a grilled heritage ham and cheese, or serving it warm on a cheese plate with heritage prosciutto and salami.
Meadow Creek Dairy is a family farm in the Appalachian Mountains of Virginia with high rolling mountains and temperate climate much like the European Alpine cheesemaking region. They began as a dairy farm in the 1980's and started cheesemaking in 1998, mastering a few raw, complex, cows' milk cheeses. As a seasonal grass based dairy, they only make cheese when their cows are out on pasture - from mid-March until December.
