The Fatted Calf was one of Heritage Foods' first customers and remains one of its biggest. Each week they bring in thousands of pounds of heritage pork for their two butcher shops and retail line of delicious Fatted Calf bacon, andouille and heritage breed salami! Their two beautiful shops are located in Napa at Oxbow Market and downtown San Francisco. Their meat case is a testament to diversity both in the fields and in the curehouse.
Berkshire Sliced Bacon This is old-fashioned bacon at its very finest, beginning with superior Heritage pigs, and then dry cured with an old-world salt-box method — including brown sugar, sea salt, and a bit of cayenne. It’s not too spicy and very well-balanced, and it is smoked over four kinds of wood, two fruit woods and two hardwoods — cherry, apple, mesquite and alderwood — to further balance the smoky flavor. The cayenne keeps the sweet and salty at bay, gives it a nice note, and you can really taste the meat itself.
Heritage Breed Salami, three varieties, each made from a specific heritage breed of pork! What makes us even more excited about these salami is that they are the first ever breed specific salami from Red Wattle, Berkshire, and Duroc pork. Each breed is paired with a different spice blend to create three distinct salami varieties: Red Wattle breed with black pepper and Spanish Pimenton, Berkshire breed with Armagnac and spices, Duroc breed with fennel pollen and red wine.
Andouille Heritage Sausage This wickedly delicious take on Andouille sausage — the smoked, spicy sausage famed for being at the heart of creole cuisine — is the best we have ever tasted! The Fatted Calf’s version has that true, old world Cajun flavor and snaps with garlic and pepper. This is a bold, richly flavored pork sausage, and if food can be described as “exciting,” this is certainly it. Put the Fats Domino on the hi-fi and get ready for the spirit of New Orleans, this Andouille is as wonderful and spicy as the best jazz, rock, rhythm, or blues!
