For the first time ever, Sam Edwards of Surry, Virginia, created his Hickory Smoked Sausage with 100% of our heritage breed pork! Made exclusively for us, this historic time honored sausage follows a 1926 recipe. The heritage pork is tossed with a custom blend of fresh sage, red and black pepper, sugar, and salt then slowly smoked with hickory wood. The result is an unbelievably delicious sausage with a unique burst of perfectly balanced porky and smoky flavor and a satisfying snap.
Surry, Virginia has been home to the Edwards family since before 1926 when Wallace Edwards Sr. first started selling ham sandwiches on the ferry boat that carried folk to Williamsburg.
