Enjoy the thrills of a whole ham experience with no need to trim or store the full leg. This is just one piece from the center of the ham, the very best balance of fat and lean, perfectly aged and ready to slice and serve. Sam Edwards III says, "this is how the Curemasters eat long-aged ham." All you need is a sharp knife to do the same.

Sliced thin, even a sliver or shaving is all you need. Serve as you would any Spanish or Italian ham. A little bit goes a long way. Wrap and store in your refrigerator — this ham has an incredibly long shelf life.

In 2005, Sam Edwards III was searching for a well-raised ham source to reproduce the flavor of the cured hams his grandfather produced. Little did we know, but when Sam called to place his first order, he was helping launch Heritage Foods — for the first time, farmers who raised 100% heritage breed pigs on pasture could be guaranteed a premium for their hams. His goal was to recall the flavors of the long-aged European hams produced like the Serrano of Spain. After years of testing, Sam had found the flavor profile (twang) he was looking for. He named his new creation Surryano, after his home in Virginia.

The 400-day aged Surryano has since won hundreds of awards and set the benchmark for American cured hams while treating the animals who provided the main ingredient with honor and dignity. Sam’s newest creation is the Surryano Wedge! We hope you will bring a piece into you home and taste how delicious it is for yourself.
