Black Pepper Salami, 5oz each, Elevation Charcuterie Elevation Charcuterie Artisan Meats’ north Denver production facility is making some of the best cured meats in the nation. All of their products come from sustainably, properly raised heritage-breed pork. We love all the salami they produce, and we’ve selected the Black Pepper Salami to include in this package. This bold, peppery salami is made with whole and ground Telecherry Peppercorns and Red wine local to the Denver region where it is produced.

What makes us even more excited about this salami is that it is the first salami ever to be made exclusively from the Red Wattle pig, an endangered breed that we must eat in order to save.

Slowly dry-cured with a bottle of fermented brown ale, this pasture-raised, heritage breed pork is rubbed with hand-raked sea salt. Charlito's Cocina was founded by Charles Wekselbaum.
