Berkshire Pork
David Newman, a preeminent farmer and scientist is owner of the oldest Berkshire genetic line in America and works with over 20 farmers in the Midwest to raise purebred Berkshire hogs. The Berkshire is Britain's oldest established breed of pig and was first imported to America in 1823.
Hogget and Mutton
Our mutton and hogget all come from ancient breeds, the Tunis and Dorset Horn, and are raised in Vermont at Tamarack Farm exclusively for Heritage Foods. By aging our lamb on the hoof, the meat becomes more marbled, mellow, and subdued, yet succulent with a full, round finish. The fat is absolutely edible, like a great lardo from Italy, and mutton meat reminds us of a great marbled steak.
Heritage Turkey
Frank Reese is a true hero of the heritage food movement and he has been featured in publications ranging from The New York Times to National Geographic as the foremost poultry expert in the U.S. His story is the reason why when it comes to meat, the word “heritage” is synonymous with “heirloom.” Good Shepherd turkeys can be traced back over 100 years, are 100% antibiotic free, and pasture raised on the Kansas prairie. This is by far the juiciest, most flavorful bird on the market today.
Goat
Naturally raised goat is a seasonal meat — ready for market in the fall. In 2011, we partnered with dairies in upstate New York and Vermont to purchase their unwanted goats. Now the project embraces all goat meat and includes world-class restaurants from coast-to-coast, and in Sydney, Frankfurt, Rome, Amsterdam, London, and beyond. Bison
Our bison is raised by Roaming Acres Farm. We are huge fans of the exquisite meat quality, flavor and juiciness of their Plains bison and the ground meat is rich and delicious. Bison meat tastes clean, minerally, beefy, herbaceous, grassy and round. An adventurous alternative for beef eaters, bison is incredibly flavorful and toothsome while naturally lean. Bison have never been domesticated which makes them truly wild game.
