We've been huge fans of Anson Mills over the years and now we're so proud to share one of our favorite items in the Heritage Foods Larder! The Sea Island Red Pea is a diminutive heirloom bean in the Southern US culinary family of "field peas." They cook quickly, are deep in flavor, and become truly excellent when cooked with our Cured Heritage Hock. The hocks add a touch of fat along with succulent pieces of meat to these tender and nutritious beans for a sustainable, healthy, and comforting meal.
Beginning with Carolina Gold rice in the early 2000s, Glenn Roberts founded Anson Mills in Columbia, South Carolina aiming to revitalize the genetics of regional heirloom grains, grits and beans. Glenn partners with growers, mills to order in small batches, and ships directly to chefs and home cooks who adore the nuanced flavor and superior texture of these grains.
Anson Mills breeds for flavor, not for shelf life, ease of transport, or visual appeal. Their growers seek to impart their own regional terroir into the grains, practicing sustainable seedsmanship, planting practices, and crop rotation. Glenn's products have become a benchmark among chefs nationwide for cold-milled grits, polenta, rice and flours. His mission is not unlike that of Heritage Foods in that we have to eat these foods to save them!
