Andouille — the smoked, spicy sausage famed for being at the heart of creole cuisine — is the prime mover in traditional Louisiana gumbo, but it is also guaranteed to put some mojo in your rice and beans, mac and cheese, any manner of soup or rice dish. It is also delicious simply sliced up and grilled in a sandwich.
The Fatted Calf’s version has that true, old world Cajun flavor and snaps with garlic and pepper. This is a bold, richly flavored pork sausage, and if food can be described as “exciting,” this is certainly it.
