We are so excited to premiere a new ancient breed of poultry, renowned for exquisite dark meat, from famed breeder Frank Reese!
A guinea tastes similar to pheasant and consists of mostly dark meat that is rich and burgundy in color, but it does not taste gamey at all. Frank says that the white meat on a guinea is darker than the dark meat of a chicken! These are moist and meaty birds but the meat is lean, low in cholesterol, and rich in essential fatty acids.
These birds are small, 3lb each, as they are only 90 days old when processed, so they are super tender and easy to cook. Prepare as you would chicken. There is no wrong way to eat a guinea: roasted, fried, stewed, or cooked sous vide.
Guineas are the native wild bird of the Savanna of Africa — ours are descendants of the original Pearl Guineas! To this day Frank’s birds still maintain their wild and territorial character on the Kansas prairie — they love to fly up to a roost in a tree and they are always on guard on the farm to announce intruders.
