This deliciously nutty Alpine-style cheese (similar in style to cheeses like Gruyere, Comte, and Appenzeller) is named for Alpha Tolman, a philanthropic dairy farmer who made an indelible mark on the town of Greensboro, the town where Jasper Hill Farm is located. Young wheels of Alpha Tolman are washed with a cultured brine to cultivate a rosy-orange rind that imparts a funky depth to the ripening paste beneath. When young, Alpha Tolman has milky, fruit and nut flavors and a smooth, creamy mouthfeel. Mature wheels are more bold and meaty with amplified butter and caramelized onion flavors enhanced by a rich and crystalline texture. Aged between 7 and 11 months in the Cellars at Jasper Hill.

Keeps refrigerated for 30 days.

Heritage Foods is expanding our cheese selections in partnership with the Anne Saxelby Legacy Fund (ASLF), whose mission is to provide monthlong paid apprenticeships for young adults to live on sustainable farms — to work, learn, and be inspired to create change in their communities. We have selected our favorite domestically produced cheeses from ASLF partner farms for pairing with Heritage meats!
