Lamb Kofta Recipe
2 pounds ground lamb (you can use ground goat as well)
2 shallots, finely chopped
2 cloves garlic, finely chopped
1 tbsp fresh mint, chopped
½ cup fresh parsley, chopped
1 tbsp salt
½ tsp cumin
¾ tsp hot paprika
1 tsp black pepper
Olive oil
Yogurt Sauce
1 cup Greek yogurt
1 tbsp lemon juice
1 tsp salt
1 tbsp fresh mint, chopped
1 tbsp fresh parsley, chopped
Combine ground lamb with salt, herbs, spices, shallots, and garlic in a bowl. Mix until the ingredients are combined. Place a cast iron pan on medium-high with olive oil and heat until hot. Divide the seasoned meat into 2" logs and place into the pan. Cook until they are browned, about 4 minutes on each side. Serve with yogurt sauce. Enjoy!
